Eritrean
Why not try an Eritrean traditional dish,
Zgni? Here is the recipe: Runan
Ingredients
Large onion (finely chopped)
Large tomatoes (remove skin)
1 small garlic clove (finely chopped)
2tsp pepper
100-150 ml of butter or oil
500g meat (preferred lamb, cleaned and cut into cubes)
For Enjera- ( to
accompany your Zgni)
500 grams of self-raising flour,
200 grams of fine maize meal flour,
1 tablespoon of yeast,
900ml of water (body temperature)
Directions for Zgni
Heat the oil or butter in a large deep pan,
Add onions, stir and cook until slightly brown,
Add pepper and continue cooking for 10-15 minutes (moderate heat)
Add tomatoes and continue stirring and cooking until the mix is reduced
to a fine sauce.
Add the meat to the sauce. Occasionally stir and cook until tender.
Make sure that the meat has been properly and thoroughly cooked.
Add garlic and salt and stir gently for a couple of minutes.
Enjera is normally
eaten with Zgni. It is similar to pancakes.
Directions for Enjera
Mix all the dry ingredients at the same time.
In regular doses, pour small amounts of water while kneading the mix
and continue until you have a creamy and soft mix (dough).
Leave overnight at normal room temperature.
Pour 2 cups of hot boiling water and leave to cool for 2-3 hours. You
should have a creamy paste similar to that used for pancakes.
Heat the frying pan until very hot and then pour one cup of mix per
"pancake",
Fry only one side and you should find that each Enjera ("pancake")
will cook within 1 minute. Continue until you have used up the mix.
Serving suggestion.
Put the Enjera into a wide plate. Take a portion of the Zgni and pour
into the centre of theEnjera. Use your hands to eat by cutting small
pieces of Endear to lift the Zgni-forks and knives are not allowed.
