Taiwanese Chinese
Try a Chinese dish at your home. Here is a recipe for one of the best-known Sichuan dishes:Gongbao jiding. It's a popular dish as part of a feast.

Ingredients
1/2 chicken breast
10 dried red peppers
2tsps finely chopped fresh ginger
1 green onion
¼ cup cashews or almonds (you pick these up at most supermarkets)

Marinade: 2tsps cornstarch, 2tsps soy sauce, 1 tsps of rice wine or dry sherry, 1 egg white, ½ tsp salt.

Seasonings: 2tsps cornstarch, 2tsps rice wine or dry sherry, 1-2 tsps soy sauce, 1tsp vinegar, ½ tsp salt, 1-2 tsps sugar, 2 tsps sesame oil, 4 tbsps oil.

Directions
Bone the chicken breast and cut the meat into pieces. Make the marinade using ingredients listed. Mix the marinade with chicken and marinade for about 15mins or more. Cut off the ends of the dried red peppers and shake out the seeds.
Mix the seasoning in a small bowl. Then heat about 4 tbsps cooking oil in a wok. Add the red peppers, cooking over a medium flame until they start to char. Turn the fire up and as soon as the peppers turn black, add the chicken pieces. Then reduce flame to medium. Stir-fry until the chicken turns white, then add the finely chopped ginger and green onion. Stir for a few seconds, and then add the cashews and seasonings. When the sauce has thickened slightly, you can then serve the dish with rice. You can easily eat 3-4 bowls of rice with this hot dish. And you will want to do it again!
