Turkish
Try a little Turkish flavour in your home. Here is Mine's recipe for
her favourite
Turkish dish - braised aubergines with tomatoes and onions:
Ingredients
2 medium sized aubergines (as long and as narrow as possible)
4 medium sized onions
4 tomatoes, olive oil
2 cloves of chopped garlic
parsley, salt
Directions
Cut of the stalks of the aubergines and slice them length ways. Make
four slits in the fleshy part of each half.
Slice the onions into rings (wet then under a cold tap if they make
your eyes water)
Peel and chop the tomatoes and then mix with the onions and garlic,
add salt and then force as much of the mixture into the slits in the
aubergine halves and arrange the rest on top.
Pour some oil and a small cup of water into a large flat casserole
Place the aubergines into the pan, making sure they are upright
Bring to the boil, put the lid on and simmer for approx, one hour
Once cooked take out of the pan and onto a dish, sprinkle some chopped
parsley and serve.
